Description
These Oven-Roasted Green Beans with Garlic & Parmesan are a simple yet incredibly flavorful side dish, perfectly crisp-tender with golden, cheesy edges. A tribute to my mom’s Sunday suppers and her handwritten recipe, they’re the perfect companion for any meal — quick enough for weeknights, special enough for holidays.
Ingredients
Scale
- 1 lb fresh green beans, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup grated Parmesan cheese
- 1 tablespoon chopped parsley (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper or foil.
- Spread the trimmed green beans evenly on the pan and drizzle with olive oil. Toss until well coated.
- Sprinkle the minced garlic, salt, and pepper over the beans, and toss gently to distribute evenly.
- Arrange the beans in a single layer, ensuring they aren’t crowded to help them roast instead of steam.
- Roast in the oven for 15–18 minutes, stirring halfway through for even browning.
- During the last 2 minutes, sprinkle Parmesan cheese over the beans and return to the oven until melted and lightly golden.
- Remove from oven, toss gently, and garnish with chopped parsley if desired before serving warm.
Notes
For extra crispiness, make sure the beans are completely dry before roasting. Avoid overcrowding the pan and wait until the last minutes to add the Parmesan so it melts perfectly without burning.
