Description

A comforting and flavorful chicken meatloaf with Parmesan cheese and a hint of herbs.


Ingredients

  • 1 1/2 pounds ground chicken
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 small onion, very finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup marinara sauce for the top
  • 2 tablespoons olive oil for pan

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat oil and gently cook the chopped onion until soft.
  3. Let the onion cool a few minutes.
  4. Mix ground chicken, breadcrumbs, egg, milk, Parmesan, garlic, parsley, oregano, salt, and pepper.
  5. Fold in the cooled onion until just combined.
  6. Press the mix into the prepared loaf pan.
  7. Spread marinara sauce on top of the meatloaf.
  8. Bake for 45 to 55 minutes until firm and the center reaches 165°F.
  9. Let the meatloaf rest 10 minutes before slicing.

Notes

For variation, use whole wheat breadcrumbs or oats and low-fat milk. Best served with roasted green beans and mashed potatoes.
