A comforting and flavorful chicken meatloaf with Parmesan cheese and a hint of herbs.
Ingredients

- 1 1/2 pounds ground chicken
- 1 cup fresh breadcrumbs
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 1 small onion, very finely chopped
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup marinara sauce for the top
- 2 tablespoons olive oil for pan
Instructions
- Preheat the oven to 375°F (190°C).
- Heat oil and gently cook the chopped onion until soft.
- Let the onion cool a few minutes.
- Mix ground chicken, breadcrumbs, egg, milk, Parmesan, garlic, parsley, oregano, salt, and pepper.
- Fold in the cooled onion until just combined.
- Press the mix into the prepared loaf pan.
- Spread marinara sauce on top of the meatloaf.
- Bake for 45 to 55 minutes until firm and the center reaches 165°F.
- Let the meatloaf rest 10 minutes before slicing.
Notes
For variation, use whole wheat breadcrumbs or oats and low-fat milk. Best served with roasted green beans and mashed potatoes.
