Ingredients

  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons milk
  • Gel food coloring (pink, yellow, green, blue, and purple)
  • ½ cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt (for filling)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Beat the butter and sugar until light and fluffy.
  3. Add the egg and vanilla and mix until combined.
  4. Whisk the flour, baking soda, baking powder, and salt in a bowl.
  5. Gradually add the dry mix to the wet mix on low speed.
  6. Stir in the milk until the dough comes together.
  7. Divide the dough into five portions and tint each with gel food coloring.
  8. Roll each portion into small balls about 1 tablespoon each.
  9. Place balls 2 inches apart on the baking sheet.
  10. Bake 8 to 10 minutes until edges are set and tops look slightly cracked.
  11. Cool on the sheet for 5 minutes, then move to a wire rack to cool completely.
  12. Beat the butter for the filling until smooth.
  13. Add powdered sugar, then beat in the cream, vanilla, and a pinch of salt until fluffy.
  14. Match cooled cookies into pairs and pipe or spoon filling onto one cookie.
  15. Press the second cookie on top and let sandwiches sit for 10 minutes to set.

Notes

You can swap colors to match a party or holiday. Try lemon zest in the filling or use almond extract for a nutty note. Store cookies in an airtight container for up to 3 days.
