Description

Ingredients

  • 2 cups fresh peaches, sliced
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup bourbon
  • 1 teaspoon cinnamon
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Melt the butter and brown sugar in a saucepan over medium heat.
  3. Stir in the bourbon and cinnamon until the mixture is smooth.
  4. Pour the caramel into the bottom of the prepared pan.
  5. Arrange the peach slices in the caramel in a neat single layer.
  6. Mix the flour, granulated sugar, baking powder, and salt in a large bowl.
  7. Whisk the milk, eggs, and vanilla in a separate bowl.
  8. Gently combine the wet and dry ingredients until just mixed.
  9. Pour the batter over the peaches and smooth the top lightly.
  10. Bake for 30 to 35 minutes until a toothpick in the center comes out clean.
  11. Let the cake cool for 10 minutes in the pan on a rack.
  12. Run a knife around the pan edge, set a plate on top, and invert the cake onto the plate.
  13. Serve warm or at room temperature and spoon any extra caramel over slices.

Notes

For a healthier twist, swap half the all-purpose flour for whole wheat pastry flour and reduce the sugar. Use less bourbon for kids and consider baking in ramekins for single-serve portions.
