- 2 cups watermelon, cubed
- 1/4 cup fresh mint leaves, chopped
- 1 tablespoon lime juice
- 1 tablespoon honey (optional)
- Salt to taste
Instructions
- Put the diced peaches and cubed watermelon in a large bowl.
- Sprinkle the chopped mint over the fruit.
- Drizzle the lime juice and honey over the mixture.
- Add a small pinch of salt to brighten the flavors.
- Toss gently to combine without mashing the fruit.
- Taste and add a touch more lime or salt if needed.
- Chill the salad for 20 to 30 minutes before serving.
- Serve cold in small bowls or on a platter.
