Peanut Butter Filled Brownie Cookies

Description

Delicious fudgy brownie cookies filled with a surprise dollop of peanut butter.


Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup cocoa powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 cups all-purpose flour
  • 1 cup peanut butter
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix melted butter, granulated sugar, and brown sugar in a large bowl until smooth.
  3. Add eggs and vanilla and mix well.
  4. Whisk in cocoa powder, salt, and baking powder.
  5. Gradually add flour and stir until just combined.
  6. Fold in chocolate chips.
  7. Drop spoonfuls of dough onto the prepared baking sheets.
  8. Place a small dollop of peanut butter in the center of each dough ball.
  9. Top each with another spoonful of dough and seal the edges.
  10. Bake for 10 to 12 minutes or until the edges are set.
  11. Let the cookies cool on the baking sheet before moving them to a wire rack.

Notes

For a lighter version, swap half the butter for applesauce. To keep cookies soft, bake until edges are set but centers remain slightly soft.
