Ingredients

  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Soy sauce (optional)
  • Green onions for garnish (optional)

Instructions

  1. Heat a little oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Stir in the onion, bell pepper, and garlic, and sauté until the veggies are soft.
  4. Mix in the pineapple chunks and soy sauce, if you’re using it.
  5. Add the rice and chicken broth, bring to a boil, then reduce the heat to low.
  6. Cover and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Season with salt and pepper to taste.
  8. Serve garnished with green onions, if you’d like.

Notes

For a healthier twist, use brown rice and add more colorful veggies or substitute chicken with tofu.
