Ingredients

- 1 pound chicken breast, diced
- 1 cup pineapple chunks
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Soy sauce (optional)
- Green onions for garnish (optional)
Instructions
- Heat a little oil in a large skillet over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the onion, bell pepper, and garlic, and sauté until the veggies are soft.
- Mix in the pineapple chunks and soy sauce, if you’re using it.
- Add the rice and chicken broth, bring to a boil, then reduce the heat to low.
- Cover and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Season with salt and pepper to taste.
- Serve garnished with green onions, if you’d like.
Notes
For a healthier twist, use brown rice and add more colorful veggies or substitute chicken with tofu.
