Description

These Pineapple Chicken Kabobs are the perfect taste of summer, with tender, marinated chicken grilled alongside sweet pineapple and colorful veggies. They’re simple to make and bring such a bright, wonderful flavor to any barbecue or weeknight dinner.

  • 1 1/2 lbs chicken breast, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 large onion, cut into chunks
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons ketchup
  • 2 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a medium bowl, whisk together olive oil, soy sauce, honey, ketchup, minced garlic, ginger, and black pepper.
  3. Add chicken cubes to the marinade, toss to coat, and refrigerate for at least 30 minutes (up to 2 hours).
  4. Preheat grill to medium-high heat.
  5. Thread marinated chicken, pineapple, bell peppers, and onion onto skewers, alternating for color and flavor.
  6. Place kabobs on grill and cook for 10–12 minutes, turning every few minutes.
  7. Brush with leftover marinade during the last few minutes of cooking.
  8. Cook until chicken reaches 165°F (74°C) and has grill marks.
  9. Remove from grill, let rest briefly, and sprinkle with parsley or cilantro before serving.

Notes

For best results, cut chicken and vegetables into uniform pieces for even cooking. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
