- 2 chicken breasts
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- Mix olive oil, chili powder, cumin, salt, and pepper in a bowl.
- Coat the chicken with the spice mix.
- Grill the chicken for 6 to 7 minutes per side until done.
- Grill the diced pineapple for 2 to 3 minutes to caramelize.
- Let the chicken rest, then slice into strips.
- Warm the corn tortillas on the grill.
- Fill tortillas with sliced chicken and grilled pineapple.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
For a lighter version, swap half the oil for plain yogurt. For a smokier flavor, try adding a barbecue glaze to the pineapple chicken.
