Ingredients

  • 2 chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix olive oil, chili powder, cumin, salt, and pepper in a bowl.
  3. Coat the chicken with the spice mix.
  4. Grill the chicken for 6 to 7 minutes per side until done.
  5. Grill the diced pineapple for 2 to 3 minutes to caramelize.
  6. Let the chicken rest, then slice into strips.
  7. Warm the corn tortillas on the grill.
  8. Fill tortillas with sliced chicken and grilled pineapple.
  9. Garnish with fresh cilantro and serve with lime wedges.

Notes

For a lighter version, swap half the oil for plain yogurt. For a smokier flavor, try adding a barbecue glaze to the pineapple chicken.
