  • 1 cup canned pumpkin puree
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh sage, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, pumpkin puree, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and sage. Mix until well combined.
  3. Form the mixture into meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for about 20-25 minutes, or until cooked through.
  5. In a skillet over medium heat, add heavy cream and chicken broth. Stir and bring to a simmer.
  6. Once the meatballs are cooked, transfer them to the skillet and coat them in the sage cream sauce.
  7. Simmer for an additional 5 minutes.
  8. Serve warm.
