- 1/3 cup pumpkin purée (not pumpkin pie filling)
- 1 teaspoon vanilla extract

- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3/4 cup semisweet chocolate chips or chunks
- Flaky sea salt, for topping (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add pumpkin purée and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet ingredients, mixing just until combined.
- Fold in chocolate chips or chunks.
- Scoop dough into 2-tablespoon-sized balls and place 2 inches apart on prepared baking sheets.
- Bake for 10–12 minutes, until edges are set and centers look soft.
- Optional: Sprinkle flaky sea salt on top immediately after baking.
- Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
Notes
For chewier cookies, avoid overmixing the dough and pull them from the oven while centers are still slightly underdone. Always use 100% pure pumpkin purée, not pie filling.
