Description

A vibrant and tasty Purple Potato Salad that combines colorful ingredients for a delightful side dish perfect for picnics or family gatherings.


Ingredients

  • 2 pounds purple potatoes
  • 4 green onions
  • 8 radishes
  • ½ cup sour cream (or Vegan Sour Cream)
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice (1/2 lemon)
  • ½ teaspoon kosher salt
  • Fresh ground black pepper to taste

Instructions

  1. Rinse and scrub the potatoes.
  2. Fill a large pot with water and add a few pinches of kosher salt.
  3. Bring the water to a boil.
  4. Boil the potatoes for about 20 minutes until tender.
  5. Test a potato with a fork to see if it slides through easily.
  6. Drain the potatoes and run them under cold water.
  7. Slip the skins off the potatoes if you want a polished look.
  8. Cut the potatoes into bite-sized pieces.
  9. Thinly slice the green onions and the radishes.
  10. In a small bowl, mix sour cream, olive oil, lemon juice, and the kosher salt.
  11. Pour the dressing over the potatoes.
  12. Add plenty of fresh ground black pepper.
  13. Mix gently to combine.
  14. Taste and add more kosher salt if needed.
  15. Serve at room temperature.

Notes

This salad can be made ahead of time. If the salad seems dry, stir in a teaspoon of olive oil or a little more sour cream before serving leftovers.
