Description
Fresh, creamy cucumber salad sandwiches perfect for a light lunch or snack.
Ingredients

- 2 cups cucumber, thinly sliced
- 1 cup cream cheese, softened
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 8 slices of bread (your choice)
- Butter (optional)
Instructions
- In a bowl, mix the cream cheese, dill, lemon juice, salt, and pepper until well combined.
- Spread the cream cheese mixture on one side of each slice of bread.
- Layer the cucumber slices on half of the slices.
- Top with the remaining slices of bread, cream cheese side down.
- If desired, spread butter on the outside of the sandwiches.
- Cut into quarters and serve immediately or refrigerate until ready to serve.
Notes
These sandwiches can be made healthier by using whole grain bread or Greek yogurt instead of cream cheese.
