Ingredients

- 1 cup brewed espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package ladyfinger cookies
- 1 cup fresh raspberries
- Cocoa powder for dusting
Instructions
- Mix the cooled espresso with the coffee liqueur in a bowl.
- Beat mascarpone, heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Dip each ladyfinger quickly into the coffee mix.
- Arrange a layer of dipped ladyfingers in your dish.
- Spread a layer of mascarpone mix over the ladyfingers.
- Scatter fresh raspberries over the mascarpone layer.
- Repeat layers until you finish the ingredients, ending with mascarpone on top.
- Cover and chill for at least 240 minutes or overnight.
- Dust the top with cocoa powder and add extra raspberries before serving.
Notes
Do not soak ladyfingers too long to avoid mushiness. Beat cream until stiff, but do not overwhip. Chill long enough for layers to set and flavors to meld.
