Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 large eggs

  • 1 tablespoon red food coloring
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar.
  3. Add in the eggs, vanilla extract, cocoa powder, and red food coloring; mix well.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet ingredients until well combined.
  6. Spread the dough evenly into the prepared baking pan.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cookie bars to cool completely in the pan.
  9. For the frosting, beat together the cream cheese and butter until smooth.
  10. Gradually add in the powdered sugar and vanilla extract, mixing until creamy.
  11. Spread the cream cheese frosting over the cooled cookie bars.
  12. Cut into squares and serve.

You can add nuts or chocolate chips for extra flavor and texture. Let the cookie bars cool completely before frosting for the best results.
