- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup rhubarb, chopped
- 1 cup granulated sugar (for filling)
- 1/4 cup all-purpose flour (for filling)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and line a 9×13 inch baking dish with parchment paper.
- Cream together the butter and sugar in a medium bowl.
- Stir in the flour and salt until the mixture is crumbly.
- Press half of this mixture into the bottom of the prepared baking dish.
- Combine the chopped rhubarb, sugar, flour, eggs, vanilla extract, and baking powder in another bowl.
- Mix the filling well until smooth.
- Pour the filling evenly over the crust.
- Sprinkle the remaining crumb mixture over the top of the filling.
- Bake for about 40 to 45 minutes until the top is golden and the filling is set.
- Allow the bars to cool completely before slicing into bars.
- Cut into squares and serve at room temperature.
Notes
For added flavor, you can mix in a pinch of cinnamon or substitute half the butter with unsweetened applesauce for a lighter version.
