Rhubarb Dream Bars

Description

Delicious rhubarb bars that are comforting and bright, perfect for spring baking.


Ingredients

  • 2 cups all purpose flour
  • 1/2 cup powdered sugar
  • 1 cup butter
  • 4 large eggs
  • 2 cups granulated sugar
  • 1/2 cup all purpose flour
  • 1 teaspoon salt
  • 4 cups diced rhubarb
  • OPTIONAL – 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 325°F.
  2. Mix the crust ingredients in a large bowl until crumbly.
  3. Press the crust into a well greased 9×13 pan.
  4. Bake the crust for 15 minutes at 325°F.
  5. Lightly beat the eggs in the same bowl.
  6. Add flour, granulated sugar, salt, and optional cinnamon to the eggs and mix.
  7. Stir in the diced rhubarb until it is well coated.
  8. Pour the filling over the par-baked crust.
  9. Return the pan to the oven and bake for 60 minutes.
  10. Check the center to make sure the filling is set.
  11. Let the bars cool completely in the pan.
  12. Once cool, cut into squares and serve.
  13. Store leftovers in the refrigerator.

Notes

Baking tips: Watch the oven closely in the final 10 minutes; edges should look set. To prevent over-browning, cover loosely with foil.
