Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons honey
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
  3. Arrange the rounds on the baking sheet in a single layer.
  4. Drizzle with olive oil and season with salt, pepper, and cinnamon if using.
  5. Roast for 20 to 25 minutes, flipping halfway through, until golden and tender.
  6. Transfer the rounds to a serving platter.
  7. Drizzle with honey.
  8. Sprinkle crumbled feta and chopped parsley on top.
  9. Serve immediately while warm.
