- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cinnamon (optional)
- 2 tablespoons honey
- 1/3 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
- Arrange the rounds on the baking sheet in a single layer.
- Drizzle with olive oil and season with salt, pepper, and cinnamon if using.
- Roast for 20 to 25 minutes, flipping halfway through, until golden and tender.
- Transfer the rounds to a serving platter.
- Drizzle with honey.
- Sprinkle crumbled feta and chopped parsley on top.
- Serve immediately while warm.
