- 2 large sweet potatoes
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup crumbled feta cheese
- 2 tablespoons honey
- Fresh thyme or rosemary for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then slice them into even rounds, about half an inch thick.
- In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper until well coated.
- Place the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
- Roast the sweet potatoes for about 20-25 minutes, flipping them halfway through.
- Once roasted, remove them from the oven and sprinkle crumbled feta cheese on top. Drizzle with honey just before serving.
- Garnish with fresh thyme or rosemary if desired and serve warm.
Notes
Cut uniform slices for even cooking. Don’t overcrowd the pan for best results.
