A delightful dish combining the sweetness of roasted sweet potatoes with honey and feta cheese, perfect for fall gatherings.


Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup crumbled feta cheese
  • 2 tablespoons honey
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then slice them into even rounds, about half an inch thick.
  3. In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper until well coated.
  4. Place the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  5. Roast the sweet potatoes for about 20-25 minutes, flipping them halfway through.
  6. Once roasted, remove them from the oven and sprinkle crumbled feta cheese on top. Drizzle with honey just before serving.
  7. Garnish with fresh thyme or rosemary if desired and serve warm.

Notes

Cut uniform slices for even cooking. Don’t overcrowd the pan for best results.
