Description

Ingredients

  • 1 head garlic
  • 1 medium onion, chopped
  • 4 cups chicken or vegetable broth
  • 2 medium potatoes, peeled and diced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Roast the garlic head at 400°F until soft.
  2. Heat olive oil in a pot over medium heat.
  3. Sauté the chopped onion until translucent.
  4. Add roasted garlic, diced potatoes, and broth to the pot.
  5. Simmer until the potatoes are tender, about 20 minutes.
  6. Puree the soup with an immersion blender until smooth.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve warm and top with fresh parsley.

Notes

For a lighter version, substitute heavy cream with whole milk or a mix of milk and Greek yogurt.
