- 1 head garlic
- 1 medium onion, chopped
- 4 cups chicken or vegetable broth
- 2 medium potatoes, peeled and diced
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Roast the garlic head at 400°F until soft.
- Heat olive oil in a pot over medium heat.
- Sauté the chopped onion until translucent.
- Add roasted garlic, diced potatoes, and broth to the pot.
- Simmer until the potatoes are tender, about 20 minutes.
- Puree the soup with an immersion blender until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Serve warm and top with fresh parsley.
Notes
For a lighter version, substitute heavy cream with whole milk or a mix of milk and Greek yogurt.
