Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1 cup dark chocolate chips
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix flour, butter, powdered sugar, and salt until the mix looks crumbly.
  3. Add the egg yolk and work until a dough forms.
  4. Press the dough into a tart pan and blind bake until the crust is light brown, about 15 to 20 minutes.
  5. Put sugar and water in a saucepan over medium heat and stir until the sugar dissolves.
  6. Let the syrup boil without stirring until it turns a deep gold color.
  7. Take the pan off the heat and carefully add the cream while stirring.
  8. Stir in the sea salt and mix until smooth.
  9. Pour the warm salted caramel into the baked tart shell and let it sit for a few minutes.
  10. Melt the dark chocolate in a bowl over simmering water or in short bursts in the microwave and stir until smooth.
  11. Pour the melted chocolate over the caramel and spread it to the edges.
  12. Chill the tart in the fridge for at least two hours until the layers set.
  13. Serve chilled and add extra caramel or a sprinkle of sea salt if you like.

Notes

For a healthier option, consider using whole wheat flour and lower-fat cream. A touch of vanilla can enhance the caramel flavor.
