- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 3/4 cup shelled pistachios, chopped (divided)
- Flaky sea salt, for topping
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together butter, brown sugar, and honey until light and fluffy, about 2 minutes.
- Beat in egg and vanilla extract until smooth.
- In a separate bowl, whisk flour, baking soda, baking powder, and sea salt. Add to wet ingredients and mix until just combined.
- Fold in 1/2 cup of chopped pistachios. Cover and chill dough for 15 minutes.
- Scoop 2-tablespoon portions onto baking sheets, spacing 2 inches apart. Gently flatten and top with remaining pistachios and a pinch of flaky sea salt.
- Bake 10–12 minutes until edges are golden and centers are soft. Cool 5 minutes on the pan before transferring to a wire rack.
Notes
For best results, don’t overmix or overbake. Use high-quality honey and fresh pistachios for rich flavor. Store in an airtight container for up to 5 days.
