A quick and hearty weeknight meal with savory sausage and fresh vegetables, perfect for the whole family.
Ingredients

- 1 lb sausage (Italian or smoked)
- 4 cups green cabbage, chopped
- 1 cup bell peppers, sliced (mixed colors)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tsp red pepper flakes (optional)
Instructions
- Slice the sausage into bite-sized pieces.
- Chop the cabbage into thin strips and dice the bell peppers and onion.
- Heat sesame oil in a large skillet over medium-high heat.
- Add sausage and cook until browned, about 5 minutes.
- Add onions and garlic and sauté for 2 minutes.
- Add cabbage and bell peppers and stir-fry until tender yet crisp.
- Pour in soy sauce and red pepper flakes and mix well.
- Cook for an additional 5 minutes, taste and adjust seasoning before serving.
Notes
For a lighter option, swap out smoked sausage for chicken or turkey sausage. Serve with rice or quinoa for a complete meal.
