Description

A quick and hearty weeknight meal with savory sausage and fresh vegetables, perfect for the whole family.


Ingredients

  • 1 lb sausage (Italian or smoked)
  • 4 cups green cabbage, chopped
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Slice the sausage into bite-sized pieces.
  2. Chop the cabbage into thin strips and dice the bell peppers and onion.
  3. Heat sesame oil in a large skillet over medium-high heat.
  4. Add sausage and cook until browned, about 5 minutes.
  5. Add onions and garlic and sauté for 2 minutes.
  6. Add cabbage and bell peppers and stir-fry until tender yet crisp.
  7. Pour in soy sauce and red pepper flakes and mix well.
  8. Cook for an additional 5 minutes, taste and adjust seasoning before serving.

Notes

For a lighter option, swap out smoked sausage for chicken or turkey sausage. Serve with rice or quinoa for a complete meal.
