Instructions
- In a large pot, cook the sausage over medium heat until browned (if using).
- Add minced garlic and diced sweet potatoes to the pot, cooking for about 5 minutes.
- Pour in the broth and bring to a simmer.
- Add the tortellini and cook according to package instructions, usually about 5-7 minutes.
- Stir in fresh spinach and allow it to wilt.
- Season with salt and pepper to taste.

Notes
If you want a healthier version, skip the sausage and use vegetable broth. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
