Description
A crunchy and vibrant salad made with sweet carrot ribbons, enhanced with a warm sesame dressing.
Ingredients

- 4 large carrots (peeled into ribbons)
- 1 tbsp sesame seeds (black and white mix)
- 1 tbsp fresh cilantro (chopped)
- 2 tbsp rice vinegar
- 1 tbsp soy sauce (or tamari)
- 1 tbsp sesame oil (toasted)
- 1 tsp honey (or maple syrup)
- 1 tsp fresh ginger (grated)
Instructions
- Peel the outer skin from each carrot.
- Use a peeler to shave carrots into long thin ribbons.
- Optional: place ribbons in ice water for ten minutes to crisp.
- Drain and pat ribbons dry with a clean towel.
- In a small bowl, whisk rice vinegar, soy sauce, sesame oil, honey, and grated ginger.
- Place carrot ribbons in a large bowl.
- Toss ribbons with the dressing until they are evenly coated.
- Sprinkle sesame seeds and chopped cilantro on top.
- Serve the salad right away so it stays crisp.
Notes
For added variety, consider adding thin slices of cucumber or shredded cabbage, and adjust the dressing flavors to your liking.
