  • 2 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In the slow cooker, add beef stew meat and season with salt, pepper, onion powder, and thyme.
  2. Add the halved baby potatoes around the beef.
  3. In a small saucepan, melt butter over medium heat.
  4. Add minced garlic to the melted butter and sauté for about 1 minute until fragrant.
  5. Pour the garlic butter mixture over the beef and potatoes.
  6. Add the beef broth.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
  8. Adjust seasoning as necessary and garnish with fresh parsley before serving.

Notes

You can swap the beef stew meat for chicken or turkey for a lighter option. Add more vegetables like carrots or green beans to boost nutrition.
