- 2 lbs baby potatoes, halved
- 4 cloves garlic, minced

- 1 cup beef broth

- 1 tsp onion powder

- Fresh parsley for garnish (optional)
Instructions
- In the slow cooker, add beef stew meat and season with salt, pepper, onion powder, and thyme.
- Add the halved baby potatoes around the beef.
- In a small saucepan, melt butter over medium heat.
- Add minced garlic to the melted butter and sauté for about 1 minute until fragrant.
- Pour the garlic butter mixture over the beef and potatoes.
- Add the beef broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
- Adjust seasoning as necessary and garnish with fresh parsley before serving.
Notes
You can swap the beef stew meat for chicken or turkey for a lighter option. Add more vegetables like carrots or green beans to boost nutrition.
