Slow Cooker Garlic Butter Beef with Potatoes

Description

A warm and easy dinner featuring tender beef chuck roast and flavorful garlic butter sauce, cooked slowly to perfection.


Ingredients

  • 2.5 lbs beef chuck roast, cut into large chunks
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for searing, optional)
  • 6 tbsp unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped (plus more for garnish)
  • 2 lbs baby Yukon Gold potatoes, halved
  • 1/2 cup low-sodium beef broth
  • 1 medium onion, sliced (optional)
  • 1 cup carrots, chopped (optional)

Instructions

  1. Pat the beef dry and season with salt and black pepper.
  2. Heat olive oil in a skillet if you choose to sear the meat.
  3. Sear beef chunks 2 to 3 minutes per side until browned, in batches.
  4. Place halved potatoes in the bottom of the slow cooker.
  5. Add seared beef on top of the potatoes.
  6. Scatter sliced onion and chopped carrots over the beef if using.
  7. Melt butter in a small bowl and stir in minced garlic, Italian herbs, red pepper flakes, and chopped parsley.
  8. Pour beef broth evenly over the beef and potatoes.
  9. Drizzle the garlic butter sauce over everything and toss gently to coat.
  10. Cover and cook on LOW for 420 to 480 minutes or on HIGH for 240 to 300 minutes.
  11. Check that the beef is fork tender and the potatoes are soft but not mushy.
  12. Taste and adjust salt and pepper as needed.
  13. If the sauce is thin, let the slow cooker sit uncovered for 15 minutes or mash a couple of potatoes into the liquid to thicken.
  14. Transfer the beef and potatoes to a platter and spoon extra sauce over them.
  15. Sprinkle with fresh parsley and serve warm.

Notes

This dish is excellent warmed up with crusty bread or a simple green salad.
