- 1 packet Lipton Onion Soup Mix (or similar onion soup mix)
- 1/4 cup melted butter
- 1/2 cup low-sodium vegetable or chicken broth
- 2 cloves garlic, minced
- 1 tablespoon olive oil (optional for extra browning)
- Fresh thyme or parsley, for garnish
Instructions
- Wash and slice potatoes evenly (about 1/4-inch thick) for consistent cooking.
- Lightly grease your slow cooker with butter or nonstick spray to prevent sticking.
- In a large bowl, toss sliced potatoes with melted butter, minced garlic, onion soup mix, and broth until evenly coated.
- Pour the mixture into the slow cooker, spreading evenly. Drizzle olive oil on top if desired.
- Cover and cook on low for 5–6 hours or on high for 3–3.5 hours, until potatoes are fork-tender and slightly golden.
- Stir gently before serving and garnish with fresh thyme or parsley.
