  • 1 cup chocolate chips (for cookie dough layer)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper, leaving overhang for easy lifting.
  2. Prepare brownie layer: whisk melted butter and sugar, add eggs one at a time, then vanilla. Stir in cocoa powder, flour, and salt until just combined. Spread in prepared pan.
  3. Arrange Oreo cookies in a single layer over brownie batter, breaking a few if needed to fit corners.
  4. Prepare cookie dough: cream softened butter with brown sugar and granulated sugar. Beat in egg and vanilla. In another bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture. Fold in chocolate chips.
  5. Spoon cookie dough over Oreos and gently spread to cover, leaving small peeks of Oreo visible if desired.
  6. Bake for 35–40 minutes until golden on top but still slightly soft in the center. Let cool completely in pan before slicing.

Notes

Don’t overbake; bars should remain gooey in the center. Cool completely before cutting for neat squares. Store in an airtight container for up to 3 days at room temperature, 1 week in fridge, or freeze individually wrapped portions.
