Creamy, hearty stuffed potatoes filled with delicious seafood goodness, perfect for family dinners or gatherings.


Ingredients

  • 4 large baking potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 2 tablespoons butter, melted
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the baking potatoes with a fork and bake for about 45-60 minutes or until tender.
  3. While the potatoes are baking, prepare the seafood mixture. In a medium bowl, combine the shrimp, crab meat, cream cheese, sour cream, shredded cheese, butter, lemon juice, garlic powder, paprika, salt, and pepper. Mix well until combined.
  4. Once the potatoes are cooked, remove them from the oven and let them cool slightly.
  5. Cut them in half lengthwise and scoop out a portion of the flesh, leaving a bit inside to hold the shape.
  6. Mix the scooped potato flesh into the seafood mixture until well combined.
  7. Fill the potato skins with the seafood mixture, heaping it generously over the top.
  8. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes or until heated through and slightly golden on top.
  9. Remove from the oven and garnish with chopped green onions before serving.

Notes

For a healthier option, use low-fat cream cheese or Greek yogurt instead of sour cream. You can also add more vegetables like spinach or bell peppers.
