- 4 large baking potatoes
- 1 cup cooked shrimp, chopped
- 1 cup cooked crab meat
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/2 cup shredded cheese (cheddar or your choice)
- 2 tablespoons butter, melted
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the baking potatoes with a fork and bake for about 45-60 minutes or until tender.
- While the potatoes are baking, prepare the seafood mixture. In a medium bowl, combine the shrimp, crab meat, cream cheese, sour cream, shredded cheese, butter, lemon juice, garlic powder, paprika, salt, and pepper. Mix well until combined.
- Once the potatoes are cooked, remove them from the oven and let them cool slightly.
- Cut them in half lengthwise and scoop out a portion of the flesh, leaving a bit inside to hold the shape.
- Mix the scooped potato flesh into the seafood mixture until well combined.
- Fill the potato skins with the seafood mixture, heaping it generously over the top.
- Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes or until heated through and slightly golden on top.
- Remove from the oven and garnish with chopped green onions before serving.
Notes
For a healthier option, use low-fat cream cheese or Greek yogurt instead of sour cream. You can also add more vegetables like spinach or bell peppers.
