Crispy Southwest Egg Rolls packed with flavor, perfect as a snack or appetizer.
Ingredients

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 2 green onions, chopped
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 8 flour tortillas
- Oil for frying
Instructions
- In a large bowl, combine the chicken, black beans, corn, red bell pepper, green onion, cheese, cumin, chili powder, salt, and pepper. Mix well.
- Place a spoonful of the filling mixture in the center of each tortilla. Roll up tightly, folding in the sides.
- Heat oil in a deep skillet or fryer over medium heat.
- Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels.
- Serve hot with creamy avocado ranch dipping sauce.
Notes
For a lighter version, use whole wheat tortillas and bake instead of frying.
