Description

Crispy Southwest Egg Rolls packed with flavor, perfect as a snack or appetizer.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 2 green onions, chopped
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • Oil for frying

Instructions

  1. In a large bowl, combine the chicken, black beans, corn, red bell pepper, green onion, cheese, cumin, chili powder, salt, and pepper. Mix well.
  2. Place a spoonful of the filling mixture in the center of each tortilla. Roll up tightly, folding in the sides.
  3. Heat oil in a deep skillet or fryer over medium heat.
  4. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
  5. Drain on paper towels.
  6. Serve hot with creamy avocado ranch dipping sauce.

Notes

For a lighter version, use whole wheat tortillas and bake instead of frying.
