Ingredients

- 1/2 cup plain Greek yogurt
- 3 oz cream cheese, softened
- 1 cup almond milk
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 cup old fashioned oats
- 1 tbsp chia seeds
- 1/2 cup strawberries, diced
- Pinch of salt
- 1/2 cup strawberries, chopped
- 1 tbsp pure maple syrup
Instructions
- Add softened cream cheese, Greek yogurt, almond milk, maple syrup, and vanilla extract to a bowl. Combine evenly.
- Add oats, chia seeds, and salt. Mix thoroughly.
- Stir in diced strawberries.
- Transfer the mixture to an airtight container and refrigerate overnight.
- In a small pan over medium heat, add chopped strawberries and maple syrup for reduction. Mash and let simmer for a few minutes. Remove from heat.
- Mix the reduction into the oatmeal or store it separately.
- Serve the overnight oats with strawberry reduction and enjoy!
Notes
You can use low-fat cream cheese or dairy-free yogurt for healthier alternatives. Add nuts or seeds for extra crunch.
