Ingredients

  • 1/2 cup plain Greek yogurt
  • 3 oz cream cheese, softened
  • 1 cup almond milk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup old fashioned oats
  • 1 tbsp chia seeds
  • 1/2 cup strawberries, diced
  • Pinch of salt
  • 1/2 cup strawberries, chopped
  • 1 tbsp pure maple syrup

Instructions

  1. Add softened cream cheese, Greek yogurt, almond milk, maple syrup, and vanilla extract to a bowl. Combine evenly.
  2. Add oats, chia seeds, and salt. Mix thoroughly.
  3. Stir in diced strawberries.
  4. Transfer the mixture to an airtight container and refrigerate overnight.
  5. In a small pan over medium heat, add chopped strawberries and maple syrup for reduction. Mash and let simmer for a few minutes. Remove from heat.
  6. Mix the reduction into the oatmeal or store it separately.
  7. Serve the overnight oats with strawberry reduction and enjoy!

Notes
