Description

Delicious and nutritious overnight oats with a creamy cheesecake twist, made with fresh strawberries.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or almond milk)
  • 1/2 cup Greek yogurt
  • 1/4 cup cream cheese, softened
  • 2 tablespoons honey or maple syrup
  • 1 cup fresh strawberries, chopped
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. In a bowl, mix together the rolled oats, milk, Greek yogurt, cream cheese, honey or maple syrup, vanilla extract, and cinnamon (if using) until well combined.
  2. Gently fold in the chopped strawberries.
  3. Divide the mixture into jars or containers, cover, and refrigerate overnight.
  4. In the morning, give the oats a good stir and enjoy them cold. Top with additional strawberries or graham cracker crumbs if desired.

Notes

Leftovers can be stored in the fridge for up to three days. If they seem a bit dry the next day, add a splash of milk before eating.
