Ingredients

  • 1 scoop vanilla protein powder (about 30g)
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 cup fresh strawberries, chopped
  • 4 oz reduced-fat cream cheese, softened
  • 1/4 cup unsweetened coconut flakes (optional)

Instructions

  1. Gather all ingredients in a large bowl.
  2. Mix rolled oats and protein powder until evenly combined.
  3. Add almond butter and honey; mix until a thick dough forms.
  4. Gently fold in chopped strawberries and softened cream cheese until well incorporated.
  5. Roll mixture into small balls (about 1 inch in diameter).
  6. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes before serving.

Notes

Use ripe but firm strawberries to prevent the mixture from getting too wet. If dough is too soft, chill for 10 minutes before rolling. For longer storage, freeze on a tray then transfer to a freezer bag.
