Description

Bright, soft Strawberry Kiss Cookies topped with chocolate kisses, perfect for any occasion.


Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 2 cups + 2 tbsp (280g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 package (3 oz) strawberry-flavored gelatin mix
  • 1/4 cup powdered sugar, for dusting
  • 2430 chocolate kiss candies, unwrapped

Instructions

  1. Beat the butter and sugar until light and fluffy.
  2. Add the egg, vanilla, and almond extract and mix well.
  3. Stir in the strawberry gelatin powder.
  4. Whisk the flour, baking powder, and salt in a separate bowl.
  5. Add the dry mix to the wet mix until a soft pink dough forms.
  6. If the dough is sticky, add 1 to 2 tablespoons more flour.
  7. Scoop one tablespoon of dough and roll into balls with your hands.
  8. Place dough balls on a lined baking sheet and chill for at least 1 hour.
  9. Preheat the oven to 350°F (175°C).
  10. Lay chilled dough balls on a parchment-lined sheet two inches apart.
  11. Do NOT press an indentation into the dough before baking.
  12. Bake for 11 to 13 minutes until edges look set and slightly firm.
  13. Remove from the oven and let the cookies sit on the sheet for 2 minutes.
  14. Dust the warm cookies with powdered sugar first to avoid sugar on the chocolate.
  15. While still warm, gently press a chocolate kiss into the center of each cookie.
  16. Transfer cookies to a wire rack and let them cool completely so the chocolate sets.

Notes

Chill the dough well to prevent spreading. Use room temperature ingredients for even mixing.
