  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a bowl.
  3. Cream the softened butter with the granulated and brown sugars until fluffy.
  4. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well mixed.
  5. Gradually add the dry ingredients and mix until just combined.
  6. Gently fold in the chopped strawberries so they do not mash.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets about two inches apart.
  8. Bake for 10 to 12 minutes until the edges are lightly golden.
  9. Cool the cookies on a rack before serving so they set.
