  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 lb ground turkey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 medium sweet potatoes, peeled and diced
  • 1/2 cup low-sodium chicken broth
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 green onions, sliced (for garnish)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, and cook until softened and fragrant.
  3. Stir in ground turkey, breaking it apart as it cooks. Season with smoked paprika, cumin, thyme, salt, and black pepper. Cook 6-7 minutes until browned.
  4. Add diced sweet potatoes and chicken broth. Stir and cook for about 5 minutes to soften the potatoes slightly.
  5. Transfer mixture into the prepared baking dish. Sprinkle shredded cheese evenly over the top.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes, until cheese is melted and bubbly.
  7. Let rest for a few minutes before garnishing with green onions and parsley.
