Delightful sweet potato pie bars with a crunchy graham cracker crust, perfect for fall gatherings.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups cooked and mashed sweet potatoes
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 eggs
- 1 cup mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In another bowl, mix together the sweet potatoes, brown sugar, vanilla extract, cinnamon, nutmeg, and eggs until smooth.
- Pour the sweet potato mixture over the crust and spread evenly.
- Bake for 25-30 minutes or until the filling is set.
- Allow to cool slightly, then top with mini marshmallows.
- Broil for 1-2 minutes until the marshmallows are toasted.
- Let cool before cutting into bars and serving.
Notes
Swap graham cracker crumbs for oatmeal or nut crust; add ginger for extra spice. Best served with vanilla ice cream or caramel sauce.
