Description

Delightful sweet potato pie bars with a crunchy graham cracker crust, perfect for fall gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cooked and mashed sweet potatoes
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  4. In another bowl, mix together the sweet potatoes, brown sugar, vanilla extract, cinnamon, nutmeg, and eggs until smooth.
  5. Pour the sweet potato mixture over the crust and spread evenly.
  6. Bake for 25-30 minutes or until the filling is set.
  7. Allow to cool slightly, then top with mini marshmallows.
  8. Broil for 1-2 minutes until the marshmallows are toasted.
  9. Let cool before cutting into bars and serving.

Notes

Swap graham cracker crumbs for oatmeal or nut crust; add ginger for extra spice. Best served with vanilla ice cream or caramel sauce.
