A quick and flavorful dish that combines sweet raspberry preserves with spicy jalapenos and tender chicken.

- 1 cup raspberry preserves
- 2 tablespoons extra virgin olive oil
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 pound boneless skinless chicken thighs
- 1/2 teaspoon chili powder
- 1 medium jalapeno pepper, thinly sliced
- 1 cup fresh raspberries
Instructions
- Pat the chicken dry and season with salt, pepper, and chili powder.
- Heat oil in a skillet over medium-high heat.
- Sear chicken for 4 to 5 minutes per side until golden and cooked through.
- Remove chicken and let it rest on a plate.
- In the same skillet, add garlic and cook for 30 seconds until fragrant.
- Stir in raspberry preserves, soy sauce, vinegar, mustard, red pepper flakes, salt, and pepper.
- Bring glaze to a simmer and cook until slightly thick, about 2 minutes.
- Return chicken to the skillet and spoon glaze over to coat.
- Add sliced jalapeno and warm for 30 seconds.
- Plate chicken and scatter fresh raspberries on top.
Notes
Letting the chicken rest keeps it juicy. Avoid burning garlic by lowering heat if necessary.
