Description

A quick and flavorful dish that combines sweet raspberry preserves with spicy jalapenos and tender chicken.


Ingredients

  • 1 cup raspberry preserves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 pound boneless skinless chicken thighs
  • 1/2 teaspoon chili powder
  • 1 medium jalapeno pepper, thinly sliced
  • 1 cup fresh raspberries

Instructions

  1. Pat the chicken dry and season with salt, pepper, and chili powder.
  2. Heat oil in a skillet over medium-high heat.
  3. Sear chicken for 4 to 5 minutes per side until golden and cooked through.
  4. Remove chicken and let it rest on a plate.
  5. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  6. Stir in raspberry preserves, soy sauce, vinegar, mustard, red pepper flakes, salt, and pepper.
  7. Bring glaze to a simmer and cook until slightly thick, about 2 minutes.
  8. Return chicken to the skillet and spoon glaze over to coat.
  9. Add sliced jalapeno and warm for 30 seconds.
  10. Plate chicken and scatter fresh raspberries on top.

Notes

Letting the chicken rest keeps it juicy. Avoid burning garlic by lowering heat if necessary.
