Description

Crisp and light rice paper rolls filled with rice noodles, fresh vegetables, and your choice of protein, perfect for a fast yet special dinner.


Ingredients

  • Rice paper sheets
  • Rice noodles
  • Fresh vegetables (like bell peppers, carrots, and cucumbers)
  • Tofu or protein of choice
  • Soy sauce or tamari
  • Sesame oil
  • Fresh herbs (like mint and cilantro)
  • Salt and pepper to taste
  • Cooking spray or olive oil for air frying

Instructions

  1. Cook rice noodles and let them cool.
  2. Slice vegetables and protein into thin strips.
  3. Dip a rice paper sheet into warm water until soft.
  4. Place a small amount of noodles, vegetables, protein, and herbs on the bottom third.
  5. Fold the sides over the filling and roll tightly from the bottom up.
  6. Repeat with remaining sheets and filling.
  7. Preheat the air fryer to 375°F (190°C).
  8. Lightly spray or brush the rolls with oil and place them in the air fryer basket.
  9. Cook for 8 to 10 minutes until crispy and golden brown.
  10. Serve warm with your favorite dipping sauce.

Notes

Do not overfill the rice paper or they will burst. Wet each sheet just until soft, not soggy. Give space between rolls in the air fryer for proper air circulation. Store cooled rolls in an airtight container in the fridge for up to two days; reheat in the air fryer.
