Ingredients

  • Sweet onions
  • Butter
  • Cheddar cheese
  • Monterey Jack cheese
  • Parmesan cheese
  • Fresh herbs (such as thyme or parsley)
  • Salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the sweet onions into rounds.
  3. Arrange the onion rounds in a baking dish.
  4. Grate the cheddar and Monterey Jack and grate the Parmesan.
  5. Mix the shredded cheeses in a bowl.
  6. Melt the butter and stir in chopped fresh herbs, salt, and pepper.
  7. Drizzle the butter mixture evenly over the onions.
  8. Sprinkle the cheese blend generously over the onions.
  9. Bake for 25 to 30 minutes until the cheese is melted and the onions are golden.
  10. Serve hot as a side dish.

Notes

Try cutting the butter by half and adding olive oil for a lighter version. Store any leftovers in an airtight container for up to three days.
