Ingredients

  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt to taste
  • Cracked black pepper to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley
  • 1 teaspoon cayenne pepper or hot sauce
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes and kalamata olives

Instructions

  1. Heat the skillet over medium heat and add the butter until melted.
  2. Season the chicken with salt, pepper, and paprika, then add to the skillet.
  3. Cook for about 5-7 minutes on each side, until golden brown and cooked through.
  4. Add garlic and cook for 1-2 minutes until fragrant.
  5. Pour in the chicken broth, honey, and cayenne pepper or hot sauce. Stir well.
  6. Add the caramelized onions, then bring the mixture to a simmer.
  7. Reduce heat and stir in heavy cream, mixing until combined.
  8. If using, sprinkle cheese on top and allow it to melt.
  9. Add cherry tomatoes and kalamata olives, and let them warm through.
  10. Garnish with parsley before serving.

Notes

Serve over brown rice, quinoa, or steamed vegetables for a complete meal. Can use olive oil instead of butter for a healthier twist.
