- 4 pieces boneless skinless chicken breasts or thighs
- 4 tablespoons butter (or olive oil)
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tablespoons honey
- 1 teaspoon paprika
- Salt to taste
- Cracked black pepper to taste
- 1 cup caramelized onions
- 1 cup shredded cheddar or Monterey Jack cheese (optional)
- 2 tablespoons dried parsley
- 1 teaspoon cayenne pepper or hot sauce
- 1/2 cup heavy cream
- 1 cup cherry tomatoes and kalamata olives
Instructions
- Heat the skillet over medium heat and add the butter until melted.
- Season the chicken with salt, pepper, and paprika, then add to the skillet.
- Cook for about 5-7 minutes on each side, until golden brown and cooked through.
- Add garlic and cook for 1-2 minutes until fragrant.
- Pour in the chicken broth, honey, and cayenne pepper or hot sauce. Stir well.
- Add the caramelized onions, then bring the mixture to a simmer.
- Reduce heat and stir in heavy cream, mixing until combined.
- If using, sprinkle cheese on top and allow it to melt.
- Add cherry tomatoes and kalamata olives, and let them warm through.
- Garnish with parsley before serving.
Notes
Serve over brown rice, quinoa, or steamed vegetables for a complete meal. Can use olive oil instead of butter for a healthier twist.
