- 5 medium yellow potatoes, peeled and thinly sliced
- 1 large yellow onion, finely sliced
- 6 large eggs
- 1 cup olive oil (for frying)
- 1 1/2 teaspoons salt
Instructions
- Heat olive oil in a large nonstick skillet over medium heat.
- Add sliced potatoes and onions, cooking gently for about 20 minutes until tender but not browned.
- Use a slotted spoon to transfer potatoes and onions to a large bowl and let cool slightly.
- Beat eggs in the bowl with the potatoes and onions, add salt, and stir gently to coat evenly.
- Remove most of the oil from the skillet, leaving just enough to coat the bottom.
- Pour the egg and potato mixture into the pan and cook on medium-low heat for 6–8 minutes, shaping edges with a spatula.
- When edges are firm and the center slightly wobbly, place a large plate over the skillet and flip the tortilla quickly and confidently.
- Slide the tortilla back into the skillet and cook the other side for 5 minutes until golden brown.
- Remove from heat and let rest for at least 10 minutes before slicing.
Notes
Use a large non-stick or well-seasoned skillet for an easy flip. Resting the tortilla before slicing ensures perfect texture and flavor. Serve warm or at room temperature.
