A refreshing salad featuring shredded chicken mixed with tangy Greek yogurt, cucumber, dill, and garlic, served over mixed greens.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 tablespoons fresh dill, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Mixed greens (for serving)

Instructions

  1. Add Greek yogurt to a large bowl.
  2. Grate and squeeze the cucumber, then add it to the bowl.
  3. Stir in dill, garlic, lemon juice, salt, and pepper.
  4. Mix the dressing well.
  5. Add the shredded chicken to the bowl.
  6. Stir until the chicken is evenly coated.
  7. Chill for 15 minutes if you like it cold.
  8. Serve the salad over mixed greens.

Notes

Taste and adjust salt and lemon last. Drain the cucumber well to avoid a watery salad. Use fresh dill for the best flavor. Shred warm chicken for easier mixing. Store leftovers in an airtight container in the fridge for up to 3 days.
