- 2 cups cooked chicken, shredded
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 2 tablespoons fresh dill, chopped
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Mixed greens (for serving)
Instructions
- Add Greek yogurt to a large bowl.
- Grate and squeeze the cucumber, then add it to the bowl.
- Stir in dill, garlic, lemon juice, salt, and pepper.
- Mix the dressing well.
- Add the shredded chicken to the bowl.
- Stir until the chicken is evenly coated.
- Chill for 15 minutes if you like it cold.
- Serve the salad over mixed greens.
Notes
Taste and adjust salt and lemon last. Drain the cucumber well to avoid a watery salad. Use fresh dill for the best flavor. Shred warm chicken for easier mixing. Store leftovers in an airtight container in the fridge for up to 3 days.
