- 3/4 cup brown sugar, packed
- 2 large eggs

- 2 cups semi-sweet chocolate chips
- 1/2 cup white chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture.
- Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving some space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, substitute butter for coconut oil and use coconut sugar. These cookies are best when slightly soft in the middle.
