  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add the beef chuck and brown on all sides.
  3. Add the onion and garlic, cooking until the onion is translucent.
  4. Stir in the tomato paste, thyme, and rosemary.
  5. Pour in the beef broth, then add the carrots and potatoes.
  6. Bring to a boil, then reduce heat and let simmer for 90 to 120 minutes, or until the beef is tender.
  7. Season with salt and pepper to taste.
