- 4 cups beef broth

- 1 onion, diced
- 3 carrots, chopped
- 3 potatoes, diced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add the beef chuck and brown on all sides.
- Add the onion and garlic, cooking until the onion is translucent.
- Stir in the tomato paste, thyme, and rosemary.
- Pour in the beef broth, then add the carrots and potatoes.
- Bring to a boil, then reduce heat and let simmer for 90 to 120 minutes, or until the beef is tender.
- Season with salt and pepper to taste.
