Ingredients

  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 tablespoon lemon zest (from about 2 lemons)
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • ¼ cup fresh lemon juice
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.
  2. Whisk the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing after each, then stir in the lemon zest and vanilla.
  5. Add the dry mix and buttermilk and lemon juice in turns, starting and ending with dry mix, and mix until just combined.
  6. Pour the batter into the pan and smooth the top.
  7. Bake for 50 to 60 minutes until a toothpick in the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then move it to a wire rack to cool fully.
  9. Whisk powdered sugar and lemon juice to make the glaze and drizzle it over the cooled loaf.

Notes

For a healthier version, consider using half whole wheat flour and cutting the sugar by 25 percent. Ensure the loaf cools completely before glazing.
