Ingredients

- 1 cup orzo pasta
- 1 medium zucchini, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh herbs (such as parsley or basil), chopped
Instructions
- Cook the orzo according to package instructions.
- Drain the orzo and set it aside.
- Heat olive oil in a pan over medium heat.
- Add the diced zucchini and sauté until tender.
- Stir in the minced garlic and cook for one minute.
- Add the cooked orzo to the pan.
- Pour in the lemon juice and season with salt and pepper.
- Stir in the fresh herbs and toss until well mixed.
- Serve warm as a side or a light meal.
Notes
For added protein, stir in white beans or cooked shrimp. Adjust seasonings before serving.
