Ingredients

Scale
  • 3/4 cup whole milk, heated to 110-120°F
  • 1/3 cup plus 1 tsp. granulated sugar, divided
  • 1 (1/4 oz.) packet active dry yeast
  • 4 cups all-purpose flour
  • 2 large eggs
  • 6 Tbsp. unsalted butter, softened, plus more for bowl
  • 1 1/2 tsp. kosher salt
  • 4 Honeycrisp apples, peeled, cored, cut into 1/2 inch pieces
  • 2/3 cup packed light brown sugar
  • 2 Tbsp. unsalted butter
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. kosher salt
  • 1 1/4 cups water, divided
  • 1 Tbsp. cornstarch
  • 3/4 cup packed light brown sugar
  • 1 tsp. ground cinnamon
  • 10 Tbsp. unsalted butter, softened, divided
  • 1/2 tsp. plus 1/8 tsp. kosher salt, divided
  • All-purpose flour, for dusting
  • 2 oz. cream cheese, softened
  • 1/2 tsp. pure vanilla extract
  • 3/4 cup confectioners’ sugar
  • 2 Tbsp. whole milk

Instructions

  1. In the large bowl of a stand mixer, stir the heated milk and 1 tsp. sugar.
  2. Sprinkle yeast over the top and let sit until foamy, about 5 minutes.
  3. Pour flour on top of the yeast mixture.
  4. Add eggs, butter, salt, and remaining granulated sugar.
  5. Mix on low speed until a rough dough forms; increase speed to medium-high and continue mixing until smooth and elastic, about 8-10 minutes.
  6. Grease a large bowl with butter, transfer the dough, cover, and let it rise until doubled in size, about 60-75 minutes.
  7. In a skillet over medium-high heat, bring apples, brown sugar, butter, cinnamon, salt, and 1 cup water to a simmer.
  8. Reduce heat and cover, cooking until apples are softened (25-30 minutes).
  9. Whisk cornstarch with 1/4 cup cold water; add to the apple mixture and cook until bubbling and thickened, about 30 seconds. Let cool completely.
  10. Grease a 13×9 inch baking dish with butter.
  11. Mix 3/4 cup brown sugar, 1 tsp. cinnamon, 8 Tbsp. butter, and 1/2 tsp. salt until smooth.
  12. Roll out the dough into a 19×12 inch rectangle.
  13. Spread the brown sugar mixture on top and then add the apple pie filling.
  14. Roll tightly into a log, trim the ends, and cut into 12 pieces.
  15. Arrange rolls cut side up in the prepared dish.
  16. Cover and let sit at room temperature until puffy, about 25-35 minutes while preheating the oven to 350°F.
  17. Bake rolls for 30-35 minutes until golden brown. Tent with foil if getting too dark.
  18. In a bowl, mix cream cheese, vanilla, remaining butter, and salt.
  19. Add confectioners’ sugar and milk, stir until smooth.
  20. Let rolls cool for 5 minutes and drizzle with the cream cheese glaze. Serve warm.

Notes

Enjoy warm with a sprinkle of cinnamon and a side of coffee or tea.
