Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the rolled oats, milk, maple syrup, vanilla extract, baking powder, baking soda, salt, and cinnamon to the mashed bananas and mix until well combined.
  4. Fold in the chocolate chips or blueberries if you are using them.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 15 to 20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store muffins at room temperature for up to two days or freeze for longer storage. Great with a spread of butter or almond butter.
